Zuchinni Bread

Ingredients

3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
Directions

Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).

Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.

M&M Popcorn

4 Cups popcorn kernels

3 C Marshmallows

1 ½ C M&Ms

1 C Butter

1 1/3 C Sugar

½ C Karo Corn Syrup

Vanilla (cap full)

Pop the popcorn and mix the M&Ms, Marshmallows, and popcorn in a large bowl. Combine butter, sugar, and corn syrup in medium saucepan. On medium-low heat bring to a boil and let boil for 3 minutes. Stir in the vanilla and pour over popcorn mixture. Mix well and enjoy!

My mother-in-law also said that you can combine different candies if you like, such as dots. So you can be creative if you like and don't really care for M&Ms!

German Upside-Down cake

German Chocolate Upside-Down Cake

Ingredients:

1 c. coconut
1 German chocolate cake mix
1 lb. powdered sugar
1 c. chopped nuts
1 cube butter
8 oz. cream cheese softened
Butter a 9 x 13 inch pan. Sprinkle nuts and coconut over the butter in bottom of pan. Set aside. Mix cake mix as directed. Pour cake mix over nuts and coconut. In a separate bowl, melt cube of butter. Add cream cheese and powdered sugar. Beat until smooth. Drop cream cheese mixture by spoonfuls over cake mixture. Spread as best as you can. Bake at 350 F for 45 minutes only. No frosting is needed.
