Oriental Cabbage Salad

So I've been craving this lately, and its a great summer dish. I just got the recipe from my mom...

Oriental Cabbage Salad

1 cabbage head or bag shredded cabbage
2 cups cooked chopped chicken
green onion, chopped
Sesame seeds
slivered almonds
2 packages ramen noodles

Sauce: 3 TB sugar
1 cup vegetable or sesame oil
2 TB red cider vinegar
1/2 cup soy sauce

Crunch up ramen noodles an put on cookie sheet with sesame seeds and almonds. Toast at 400 for approximately 8-10 minutes, set aside.
Combine sauce ingredients, add chicken and marinate. Chill dry ingredients separately in fridge. Combine just before serving.

Mandarin Pasta Salad

Dressing: Combine ingredients and refrigerate until ready to serve
1 tsp. finely chopped fresh ginger
1 garlic clove, pressed
1/3 cup rice vinegar or white wine vinegar
1/4 cup orange juice
1/4 cup vegetable oil
1 tsp. sesame oil
1 envelope onion soup mix
2 tsp. sugar

Salad: layer ingredients then toss with dressing, serve immediately
8 oz. bow tie pasta, cooked
1/2 cucumber sliced
1/2 cup red bell pepper diced
1/2 cup chopped red onion
6 oz. baby spinach
1 can mandarin oranges, drained
2 cups cooked diced chicken
1/2 cup sliced almonds, toasted

Spinach and Strawberry Salad

INGREDIENTS (Nutrition)
2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds
DIRECTIONS
In a large bowl, toss together the spinach and strawberries.
In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

Macaroni Salad

Ingredients:
1 bag of the multicolored noodles
1 can olives
1 can corn
1 cucumber
1 bell pepper
½ bottle of Italian dressing


Directions:
Cook noodles according to directions on the package. Drain all water from the noodles and add remaining ingredients to noodles. Each ingredient can be altered in amount according to taste. Serve either warm or cold. Other vegetables can be added such as broccoli and peas. Let me know how you experiment!!
