brussel sprouts with apple and bacon

So I know I posted a recipe a lot like this the other day, but I went to Albertsons and they gave me this holiday little recipe book and there was this recipe in there. I had everything so I gave it a try, and I liked it better than the other one! ( although that might be because I didn't burn the bacon and brussel sprouts this time) So here it is!

Ingredients:
12 oz brussel sprouts, quartered
1 fuji or gala apple, cut in 1/2 inch dice
1 red onion, cut in 1/2 inch dice
3 slices applewood smoked bacon or good quality bacon, cut in 1/4 inch strips
1 TB canola oil
3/4 tsp kosher salt
2 TB lemon juice

Directions:
Place the oil, bacon and onions in a saute pan, on medium heat. Stir constantly and cook 4-5 minutes to caramelize. The onions should be golden and the bacon fairly crispy.

Add the apples, brussel sprouts and salt and continue cooking for another 5-8 minutes. Stir occasionally, but you want to let sit still in the pan long enough to sear and color.

When all are nice, seared, golden brown, but brussel sprouts are still partially crisp, turn off heat and add lemon juice. Stir and remove from pan to stop cooking process. Serve warm.

Note: when I did this I had about a half of pound bacon left (about 5-6 slices) from a previous recipe so I just used the rest, and I thought the ratio frm bacon to brussel sprouts was perfect. I also cut the bacon to more between a half inch to an inch. I also only used half of a sweet onion. I loved this dish!

1 Cup Flour

2. Take cookie sheet and spray with Pam and line with wax paper and spray wax paper with Pam, dump mixture onto wax paper. Spread out thin and bake at 350 degrees for 12 min. dump onto powdered sugared towel upside down and pull wax paper off and put powder sugar on top and then roll up and let it cool and then put the toppings on and roll up again and eat.

For toppings you can use cool whip or whipped up whipping cream and fruit, thats my favorite anyway!

1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt and black pepper to taste

Grilled Asian Chicken

Ingredients:
1/4 cup soy sauce
4 teaspoons sesame oil
2 Tablespoons honey
3 slices fresh ginger root (I usually don't add this and we like it)
2 cloves garlic, crushed
4 skinless, boneless chicken breast halves

Directions:
In a small microwave safe bowl, combine soy sauce, oil, honey ginger root and garlic. Heat in microwave on medium for 1 minute then stir. Heat again for 20 seconds, watching closely to prevent boiling.
Place chicken breasts in a shallow dish (I put them in a ziploc bag) and pour mixture over and let marinate for at least 15 minutes.
Preheat a grill for medium-high heat. Drain marinade into a small saucepan. Bring to a boil and simmer over medium heat for 5 minutes and set aside for basting.
Lightly oil the gril grate. Cook chicken for 6-8 minutes per side, or until juices run clear. Baste frequently with remaining marinade.

Pan Roasted Brussel Sprouts with Bacon

So I've discovered the foot network channel, and I watch it when I breastfeed, and the other day I was watching a show and she was doing something with brussel sprouts that sounded pretty good, and the next time we got the Bountiful baskets it had brussel sprouts! So I tried this recipe.

Ingredients:
4 strips thick-cut bacon
2 tablespoons butter
1 pound brussels sprouts, halved
1/2 large onion, chopped
Salt and freshly ground black pepper

Directions:
Cook bacon in a large skillet over medium-high heat until crispy. Remove to a paper towel-lined plate, then roughtly chop. In same pan with bacon fat, melt butter over high heat. Add onions and Brussels Sprouts and cook, stirring occassionally, until sprouts are golden brown, 8 to 10 minutes. Season with salt and pepper to taste, and toss bacon back into pan. Serve immediately.

Just a note, I put the brussel sprouts into a bowl with a little water and microwaved them for a couple minutes and in the pan they only needed to cook for about 6 minutes for me.

Homemade Hot Chocolate Mix

This makes about 5 quarts of dry mix - and it costs about $12 to make.

8 qt box pwd milk (9 cups)
1 lb box pwd sugar (4 cups)
1 lb box pwd chocolate milk - like Nesquick (5 cups) *this makes pretty sweet hot chocolate mix - if you don't want it to be so sweet just put 4 cups of of the chocolate milk mix and then 1 cup of coco powder
10 oz jar pwd creamer (3 cups)

Mix all together in a large bowl. Store in a 5 quart container with a tight lid. 3 heaping spoonfulls for an 8 oz mug of hot water. (Don't use milk because of the powdered milk)
