Egg Casserole

Egg Casserole

1pkg Pillsbury crescent roll dough

1 lb sausage browned

9 eggs

3/4 c milk

1 T dried onion or 1/2 of a fresh onion

1/4 c green pepper (opt)

1 t salt

1/4 t pepper

1/4 t oregano

1 to 1 1/2 cups grated cheese

Grease 9X13 pan. Heat oven to 350. Spread roll dough in the bottom and up the sides just a bit. Sprinkle crumbled sausage over crust. Mix eggs with milk with fork or wire wisk. Add onion, green pepper, salt, pepper, and oregano. Add cheese. Pour egg mixture over crust. Cook 35-45 minutes until eggs are lightly browned but center is cooked. Serve with sour cream and salsa (if desired).

C is for Cookie

So I found this recipe on a friend's friend's blog... I haven't tried them yet but I want to, so here it is!

1/2 cup confectioner's sugar
1 2/3 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 tsp baking powder
1/4 tsp salt
8 tbs (1 stick) unsalted butter at room temperature
1 1/4 cups sugar
1/2 tsp vanilla extract

preheat oven to 350. grease baking sheets with butter.

mix flour, cocoa, baking powder, and salt.

in a large bowl, using an electric mixer, beat the butter and sugar on medium speed until creamy, about 3 minutes. turn off the mixer and scrape down the bowl with a spatula. add 1 egg and beat on medium speed until blended. add the other egg and vanilla and beat until blended. turn off the mixer and add the flour mixture. beat on low speed just until blended.

using a tablespoon, scoop up a rounded spoonful of dough and roll it into a ball. roll the ball in the confectioner's sugar until covered. place balls on prepared baking sheet.

bake the cookies until the crackled and puffed (about 10 to 12 minutes). transfer to wire rack.

Crock Pot Lasagna

My friend Emily posted a recipe for crock pot lasagna... I thought it sounded good although I haven't tried it yet. It looks pretty easy too. Click here to view it.

Just layer lasagna noodles, browned meat, cheese, cottage cheese and sauce. Repeat, and top off with some more cheese! She said she cooks it on low for about 2 hours.

Chocolate Chip Pecan Pie




Ingredients:
9" pie crust (uncooked)
1/2 c. butter
2 eggs beaten
2 t. vanilla
1 c. sugar
1/2 c. flour
1 c. chocolate chips
1 c. chopped pecans


Whipped Cream
1/2 c. whipping cream
2 T. powdered sugar
1/4 t. vanilla


Directions:
Heat oven to 350. In small bowl cream butter, add eggs and vanilla. Combine sugar and flour in small bowl. Add to creamed mixture. Stir in the chocolate chips and pecans. Pour into the pie shell. Bake 45-50 minutes or until golden brown.

Serve with whipped cream - Combine all ingredients for whipped cream. Beat until stiff.


Number Of Servings: 1 pie

Pizza Wheels

So at my bridal shower my mom gave me this cookbook, called cooking for two. Its way awesome for being newlyweds. Anyway, we decided to try out this recipe last night called pizza wheels. They weren't amazing or anything but they were easy and i'll probably do them again.

All you need is 8-10 refrigerator biscuits, grated cheese, spaghetti sauce, and any toppings you like. Press down the biscuits til they're flat, spread some spaghetti sauce on them, and sprinkle with cheese and toppings. Bake on 400 for 10 minutes.

Easier than pie! or cake!

Southwest chicken

I got this one from the recipe site from the ward. Its easy and I make it often on Sundays now.

2 large frozen boneless skinless chicken breasts
1-1 1/2 cup Salsa
1 small bag frozen corn
1 can black beans, drained and rinsed
1/4 cup chopped cilantro (optional)

Layer in order in crockpot, cook on low 4-5 hours. Remove chicken and shred, then return to crockpot until ready to serve. Serve on tortillas or over tortilla chips.

Topping options:
Shredded cheese
Sour cream
Avocado
Cilantro
Lime wedges

Oriental Cabbage Salad

So I've been craving this lately, and its a great summer dish. I just got the recipe from my mom...

Oriental Cabbage Salad

1 cabbage head or bag shredded cabbage
2 cups cooked chopped chicken
green onion, chopped
Sesame seeds
slivered almonds
2 packages ramen noodles

Sauce: 3 TB sugar
1 cup vegetable or sesame oil
2 TB red cider vinegar
1/2 cup soy sauce

Crunch up ramen noodles an put on cookie sheet with sesame seeds and almonds. Toast at 400 for approximately 8-10 minutes, set aside.
Combine sauce ingredients, add chicken and marinate. Chill dry ingredients separately in fridge. Combine just before serving.

Apple Bread


Description:
This bread is so good and so easy to make. I also think the best part is how good your house smells after you make this. I think it's our new favorite. Grating the apples takes the longest...and make sure you peal and core them before you grate them!

Ingredients:
1 1/4 C oil
2 eggs
2 C sugar
1t cinnamon
1t baking soda
1t salt
3 C flour
1/2-1 C nuts (Optional)
3 C grated apples


Directions:
Mix everything together. Pour into 2 greased and floured loaf pans. Bake at 325 for 1 hour.

Number Of Servings: 2 Loafs

Hot Pockets

1 can of biscuit dough (like Cresant Roll dough - you can use either Cresant Roll dough or the cheaper kind that is about $0.50 or so)
Cheese
Meat (lunch meat works well)

Usually the cans of biscuits that we use have 10 biscuits in them. You will need two biscuits for each hot pocket.

Flatten the biscuits so they are about 1/2 inch thick
Add cheese and meat
Put another biscuit on top and seal the edges. Cook according to directions on the biscuit package (Usually about 400 degrees 8-10 minutes) or until the biscuits are starting to turn brown.

Nachos

Nachos
Ingredients
1 small block of Velveeta cheese cubed (the nachos kind if you want more spicey or if you don't, just regular will work)
1 can of Cambells Nacho Fiesta Soup
Salsa
1 pound of browned hamburger


Mix everything together adding salsa to taste. You can either put this all in a crockpot or it can be done in a microwave (stir about every three minutes if you use the microwave). You may need to add a little bit of milk if it is too thick. Eat with tortilla chips. YUMM!

Cake Mix Cookies

Ingredients
1 cake mix of any flavor
2 eggs
1/3 cup oil
Mix all the ingredients together. Bake at 350 for 8-10 minutes (Different kinds of cake mix take different times to finish cooking)For a variety - before baking cookies try rolling them in white sugar, cinnamon sugar, or powdered sugar (especially good for chocolate cookies).

Unbaked Cookies

Ingredients

7 oz marshmallow creme
1 cup peanut butter
1 cup chocolate chips
1 cup rice krispies

Mix the marshmallow creme and peanut butter together (To get the marshmallow creme out of the jar easier, run your spoon under hot water)Mix in the chocolate chipsFold in, as gently as possible, the rice krispiesDrop by tablespoon fulls onto a cookie sheet Enjoy!No baking necessary for this recipe!
